A New Approach for Studying the Stability and Degradation Products of Ascorbic acid in Solutions

The potentiometric titration (PT) method has been applied for the first time to investigate stability of l-ascorbic acid (H2Asc) and determine its degradation products in aqueous solutions. presented electrochemical procedures can be considered a fast, simple inexpensive way control H2Asc regular analytical practice as well chemical pharmaceutical industries. Experimental data modeling suggest that enolic form 2,3-diketogulonic predominates solution main product dehydroascorbate degradation. Furthermore, PT results supported by conductometric measurements electrospray ionization mass spectrometry enable us propose putative mechanism decomposition. Moreover, it proven among different types investigated electrolytes (KNO3, KClO4 KSCN), thiocyanate ions (SCN−) reveal stabilizing effect against H2Asc. Thus, presence SCN− is proposed an alternative some organic solvents earlier used. Finally, new paraffin-protection-layer procedure recommended studying storage solutions comprising components sensitive external factors (e.g. O2, CO2) evaporation.
